wastes enough food that could feed over 200 million adults every year. ● Food
waste in America
consumes approximately 300 million barrels of oil every year from fossil fuels
used in farming, which is one of the nation's largest sources of greenhouse gas
emissions. ● Rotting food "produces substantial quantities of methane-gas
with 25 fold more potent global warming potential than CO2 which would have
been the primary end product had the food been eaten and metabolized by humans.
● A quarter of all freshwater usage in the US goes to produce food that is
never eaten.
How you can go green at Sushi 21: Tell us what you don’t want. For example, some don’t eat wasabi or ginger. Some would only like light-rice or don’t feel
like having it at all with their bento or bowl. Others
skip the complimentary salad and orange. Just let us know!
Problem:
The population of Bluefin Tuna has shrunk 90%, and it is estimated that they
will be wiped out in 3 years at current rate of overfishing. Whereas the problem as been identified years ago, global politics has inhibited any substantial progress. Price of tuna has
also skyrocketed.
How Sushi 21 is going green: For a while now we have proudly stopped serving
all-you-can-eat sushi. That substantially reduces waste and demand. We have also put a halt on Bluefin tuna altogether. In turn, we are providing you with
alternatives such as Albacore, Yellowfin and Super White Tuna.
How you can go green at Sushi 21: Whenever you see “tuna” on the
menu, you can ask us to replace with the alternatives. Yes, you can decrease
the demand for tuna. Our hope is for this movement to go viral.
